From the Cockpit to the Kitchen: The Story Behind MG Commercial Kitchen’s Growing Culinary Vision

Edrick Walker’s journey into the culinary business is anything but conventional.

Before becoming the driving force behind MG Commercial Kitchen & Culinary Rentals, Walker built experience across several very different fields, including education, aviation and offshore work. Along the way, however, one early influence remained with him: the lessons he picked up while helping in his aunt’s school cafeteria in Tunapuna during his younger years.

Those early experiences gave him a practical understanding of food service, preparation, customers and the discipline required to run a business. Years later, that foundation would become part of a much bigger idea.

Walker went on to teach mathematics and technical drawing, later trained as a commercial pilot and also worked as a flight instructor. His professional path eventually took him into the offshore industry, where he spent more than two decades before returning to the idea of building something of his own.

Together with his wife, he developed MG Commercial Kitchen & Culinary Rentals, creating a professional space designed for people who need access to a fully equipped kitchen without taking on the expense of building one from the ground up.

The concept serves a growing group of culinary professionals, including caterers, bakers, chefs, food brands, culinary instructors, meal-prep operators and entrepreneurs preparing for events or expanding production.

What makes MG Commercial Kitchen especially valuable is the role it can play in the growth of smaller food businesses. For many entrepreneurs, the biggest challenge is not talent or demand, but access to the right facilities, equipment and working environment. A professional rental kitchen can give them room to test ideas, increase output, host classes and take on larger jobs while keeping overhead under control.

With its established St. Joseph operation and expansion into Tunapuna, MG Commercial Kitchen is steadily becoming part of the infrastructure supporting Trinidad and Tobago’s culinary entrepreneurship ecosystem.

Walker’s story also carries a wider message about reinvention. His path from the classroom to aviation, offshore work and eventually the kitchen shows how experience gathered across different stages of life can eventually come together in unexpected ways.

Today, instead of simply building a business for himself, Walker has created a space where other entrepreneurs can build theirs.
